Castle & Key Distillery's Cask Finish Series Experimental Edition is a Kentucky Straight Rye Whiskey finished in extra old Haitian rhum casks, part of the distillery's limited experimental line exploring unconventional barrel finishes. Distilled from a mashbill of 63% rye, 17% corn, and 20% malted barley at the historic Frankfort, Kentucky distillery on the grounds of the former Old Taylor site, the rye is aged in new charred American oak before finishing for an extended period in rhum casks sourced from a Haitian distillery. Bottled at cask strength, 58.05% ABV (116.1 proof), with no artificial flavoring agents added. Expect notes of brûléed banana, cream cheese frosting, dried pineapple, and Demerara sugar on the nose, with fruitcake, blackstrap molasses, plum, rum-soaked raisins, black cardamom, and clove on the palate, finishing with anise and dark sugar. Best enjoyed neat or with a single large cube to open up the tropical, spiced character. 750ml bottle.
